What makes Draconis wine different?
These wines are made completely by hand and in an 'old world' way.
All wine is created 'reductionist' style with a
Sur Lie technique; no oxygen is allowed to touch the wine during its entire aging process.
No filters are used, nor is the wine racked or fined (racking is the transferring of wine from a dirty barrel to a clean barrel.)
Draconis wines spend 19 to 24 months in barrel, untouched and unaltered, depending on the vintage.
All this work keeps the 'character' of the wine intact. The results are creamy, silky smooth wines; easy to drink, and full of flavor.
Additional Wine Details
Zinfandels - My Zins are super smooth and full of fruit. Completely dry (no residual sugar), they are delicious as stand-alones or with any spicy or tomato-based dish.
Syrahs - The Syrahs are incredibly versatile. Just like the Zins in mouthfeel, they can be austere and are not overly sweet. They match very well with all cheeses, Mexican, Cajun, or Bar-B-Que meals.
Petite Sirah - I only need to make one Petite Sirah to get my point across. You cannot have a Lodi Wine without having a Petite. Very similar to Cabernet Sauvignon in complexity and style, the Draconis Petite is opaque in color, full of character, and goes well with pure meat. Just pure meat.
